i finished my first round of whole30 and to say i am obsessed is an understatement. it truly changed my life and the way i will eat forever. i did a total of 34 days and then went to california for my sister's wedding. my mom convinced me to get some frozen yogurt on the way home from the airport, and after i gave in, i was almost immediately sick. needless to say, my body doesn't really appreciate dairy. but did that stop me from nearly demolishing a whole leftover wedding cake single handedly? no. it did not.
anyway, i am back with whole30 round 2 for september and david is on board with me! today was our first day and he woke up early for work and i swear i thought he was going to pop open a diet coke and grab some donut holes, but the guy ate a banana and a lara bar, went to chiptole for lunch and had a totally compliant meal! he's a keeper.
i am going to try to post one meal a day in an effort to hold myself accountable and show the world that whole30 doesn't have to be mundane or gross or unsatisfying. i love the food i eat and i love the way it makes me feel. i was excited to come home from our trip just so i could start another round. clean eating for life.
bacon, asparagus and bell pepper scramble with guacamole
3 slices of compliant bacon
5 stocks of asparagus
1 potato (i used a red one, about the size of a plum)
1 bell pepper (i used orange)
2 tablespoons of ghee
1 single-serving container of guacamole
salt and pepper
1. slice up about five stocks of asparagus, one bell pepper and a potato into bite sized pieces. toss into a skillet with a tablespoon or so of ghee (clarified butter) and salt and pepper.
2. slice three pieces of uncooked compliant bacon and add to skillet. cook over medium heat for 15 minutes or so, or until bacon is fully cooked and veggies are tender.
3. crack three eggs over skillet. salt and pepper them before scrambling together with bacon and veggies.
4. eat with guacamole and enjoy!
