these are so easy, i feel silly even writing out a recipe. but honestly, most of my whole30 meals are. we had these for lunch today and they were delicious...you could top each with another sweet potato bun and eat it like a sandwich, but a knife and fork is maybe a little easier and cleaner.
anywho, start by peeling the fattest sweet potatoes you can find. slice them about 3/4 of an inch, brush each side in ghee, sprinkle with salt and pepper, toss on a cookie sheet and roast in a 400 degree oven for about 15 minutes or so, flipping once or twice. just keep an eye on them until they're a little bit crispy!
i got my pulled pork from costco and i love it. it's kirkland brand and comes in black packaging. finding precooked compliant meats is such a time saver. cut off a chunk of pork, cover and microwave for about a minute or until it's heated through.
when sweet potatoes are done, simply stack pork on top and if you're in the mood, add a dollop of guacamole. there is pretty much nothing in this world i don't eat with guacamole these days and i think it's the perfect addition to these babies! serve with some roasted veggies (we had asparagus, green beans and carrots today) and you've got yourself a satisfying and delicious and healthy meal!
