david's favorite whole30 meal is anything with crispy bacon and roasted sweet potatoes. so i have been making this for him pretty regularly and he's a happy man!
start by peeling and chopping up some sweet potatoes into pieces, tossing them in ghee and salt and pepper, and placing them on a cookie sheet. cut up a chunk of compliant bacon and toss with sweet potatoes. cook at 375 for about 35 minutes or until bacon is crispy and potatoes are well done. there will be a ton of bacon fat, so i like to take them out at this point and transfer the potatoes and bacon onto a different cookie sheet. put back into the oven for another 10 minutes or so until the potatoes are crispy.
transfer the bacon fat into a pan. chop up a bell pepper, salt and pepper, and cook until tender, about ten minutes. when pepper is tender, add about 5 eggs, another dose of salt and pepper, and cook all together.
remove potatoes and bacon from the oven. layer them at the bottom of a bowl and add eggs and peppers on top. i like to add guacamole on mine, but david's not down with avocados. salsa would be delicious also! or one of those fancy compliant hot sauces that i don't have. either way, this is a delicious and filling breakfast that we are mildly obsessed with...it's also really easy to eat in the car while you're late to drop your kid off at preschool. just sayin'.
