salsa chicken stuffed peppers
7 frozen chicken tenders
1 jar of compliant salsa (i used trader joe's salsa autentica)
5 bell peppers
1. chop the onion and put in a crockpot with frozen chicken and entire jar of salsa. cover and cook on low for 6-7 hours or until done. shred with fork.
2. cut the tops off of bell peppers. remove insides. fill peppers with chicken and bake at 350 for 20-25 minutes or until peppers are tender.
3. top with guacamole and enjoy!
