if you know me, you know that i love to eat. and as much as i would love to be a skinny girl, it's just not going to happen for me because i love to eat. and i particularly love to eat pizza. we always have conversations about food you could just eat a ton of...and pizza is high up on my list of foods i can down. pizza, tacos, ice cream, and cake of any kind. but the thing about pizza is that it usually makes me feel disgusting after i eat it. probably because i have zero self control and usually end up eating about five slices too many, and also probably because i am pretty sure i have a gluten sensitivity.
mind you!!! disclaimer::: i am not a celiac, i am not a gluten-free person, i just think that gluten makes me bloated and fat. so when my new friend (you heard that right guys!!! i have a friend!!) made this cauliflower pizza crust for me, i was stoked on life. it's all the yummy cheesy goodness of pizza without any of the guilt. it's 100% gluten-free and this recipe can be adjusted for any kind of pizza. it does kind of stink up your house, as roasting vegetables usually does, and this recipe is kind of a labor of love, but you guys!!! it is really, really good and i think you should make it.
cauliflower pizza

½ head cauliflower, chopped into florets
1 egg
½ tsp oregano
½ tsp basil
¼ tsp salt
¼ tsp pepper
¼ cup freshly grated Parmesan cheese
2 tbsp cornmeal
1 cup pizza sauce
1⅓ cups shredded mozzarella cheese, divided
toppings, as desired
1. start by preheating your oven to 350 degrees and chopping your cauliflower head into florets. add florets to food processor or fancy blender until it resembles rice-like crumbs.
2. spread cauliflower crumbs into a baking sheet and pop in the oven for 10 minutes.
3. remove from the oven and let cool for a couple minutes then press a paper towel into the crumbs, absorbing as much moisture as possible. return to the oven for another 10 minutes and repeat two more times.
4. place cauliflower back into oven for one last 5 minute roast. remove from oven and let cool. turn oven up to 425.
5. transfer the cauliflower crumbs to a bowl, add the egg, herbs, salt, pepper, parmesan cheese, and ⅓ cup mozzarella cheese. stir well with a fork, then knead a few times in the bowl with your hands.
6. line a pan with parchment paper and sprinkle some corn meal on top. press cauliflower mixture onto the pan and press firmly into a circle shape.
7. bake in the oven for 15-20 minutes (depending on your oven!) or until the edges brown. mine got a little bit brown all over, but it was just as delicious, trust me, i ate the whole pizza. yolo.
8. remove pizza from oven and top with pizza sauce and remaining 1 cup of mozzarella cheese. pop back in the oven for 10 minutes and enjoy!!
