have you tried substituting pasta for spaghetti squash yet?? i had heard about it before and was excited when i finally found it at the grocery store. it is a seasonal vegetable, so it only comes around during the fall/winter and that is a bummer because it is so so good and so versatile!
our favorite way to eat spaghetti squash is to eat it in a spaghetti bake. this gives all the comfort of a baked pasta dish but without the guilt. to cook the spaghetti squash, cut it in half lengthwise, scoop out the seeds, rub on some olive oil and salt and paper, and bake it flesh-side down at 400 degrees for about 40 minutes. let it cool for a couple minutes, and then use a fork to get all the "spaghetti" out. one squash will feed about 4 people, or feed us for two meals.
to make a spaghetti squash bake, put the "spaghetti" in a 9x9 pan and cover with meatballs, some spaghetti sauce, and top with cheese. bake in the oven until all the cheese melts and it's heated all the way through! i haven't tried it yet, but i imagine you could make a delicious pesto chicken bake or one with alfredo sauce...really, the possibilities are endless!
