i found this recipe last year when i was pregnant. corn chowder is probably one of my favorite soups and i love crockpot recipes...especially when i am 8 months pregnant and lazy and hungry. sometimes food just tastes better when you're pregnant, you feel me??
anyway, the great thing about this recipe is that 1. you probably have all the ingredients in your pantry already (you might have to search the back of your freezer for a bag of frozen corn) and 2. if you don't, the ingredients are cheap (one can of creamed corn is all of $.80) and 3. even if you are really into watching sesame street with your baby and you forget about the bacon in the oven and overcook it, it's cool. crispy bacon is optimal my friends!
crockpot corn chowder
2 cups potatoes, peeled and cubed (i used golden potatoes because i am not down for potato peeling)
1/2 onion
16 oz. creamed corn (1 1/2 cans)
2 cups frozen or fresh corn
6 slices cooked bacon, crumbled
1 teaspoon worcestershire sauce
1 teaspoon seasoning salt
1/4 teaspoon pepper
1 tablespoon sugar
2 cups half and half
1. combine all ingredients in crockpot, except for half and half.
2. cook on high for 3-4 hours or until potatoes are soft.
3. turn crockpot to low and add half and half.
4. remove the lid and let soup thicken for 15 minutes or until heated and desired consistency.
