i get my turkey burgers from costco in the frozen section and i kid you not, they are one of my very favorite whole30 finds! they are so good. so so so good. the only part of this meal that really needs to be written out like a recipe is the cauliflower mash. the turkey burger was just cooked in a little bit of ghee and sauteed on the stove. flip occasionally until it's golden on both sides.
the roasted green beans are my new favorite way to eat green beans. they are also frozen from costco and you get a huge bag for like $6. spread a bunch on a cookie sheet, spoon on some ghee, and toss with salt and pepper. roast in the oven at 375 for about 15 minutes or until they get slightly brown. i love when they're a little crispy! i promise this will be your favorite way to eat green beans forever now.
cauliflower mash
1/2 head of cauliflower
1/2 large onion
2 cloves of garlic
dash of compliant chicken broth
salt and pepper
ghee
1. chop up cauliflower, onion and garlic. cover in water and steam on the stove until cauliflower is super soft, about 25 minutes.
2. drain water. bring cauliflower, veggies and garlic back to the pan. mash with potato masher. add generous amount of salt and pepper. add dash of chicken broth.
3. transfer to food processor and buzz until texture resembles mashed potatoes.
4. add more salt and pepper if necessary and enjoy!
