i went to trader joe's earlier this week and was a little bit too excited about all of the compliant food they had!!! i will do another post on the snacks i got (whole30 police don't get on my case about snacks! i have a working man on my hands who needs them.)
anyway, these sliders are the first meal i made after my grocery trip. i was dying to use this avocado salsa i got...it is unbelievably good!! i think i could eat it on everything.
i started by washing a fat sweet potato and slicing it into thin slices. i rubbed both sides with ghee and salt and pepper, and roasted it for maybe 20 minutes at 375, flipping a couple times.
while it was cooking, i sauteed some of trader joe's chile lime chicken burgers (you can find them in the frozen section) and they cooked up so nicely! in just about 5 minutes, they were perfectly done.
when the sweet potato "buns" were done, i put the chicken burger in between the potatoes and added some of that delicious avocado salsa and it was goooooood. i think the key to the sweet potato buns is this: 1. don't make them too thick and 2. wait for them to totally cool and kind of dry out...it makes them much more easier to handle and actually eat like a burger. i served these with some roasted green beans with bacon and it was a perfect meal.
